Congee With Eggplant Stir Fry

Another Saturday lunch. Leftover rice turned into plain congee (rice porridge). Leftover vegetable stir fry: green onion, smoked tofu, carrots, eggplant and oyster sauce. A clean the fridge kind of meal. Sometimes those turn out to be the most satisfying meals, yes?
