Recipe: Quick No-Rise Dinner Rolls

Sometimes we run out of bread, and have no time to wait for dough to rise. These lovely little rolls hit the spot, and I will be making them more often. It was my first time trying to shape dinner rolls so they came out in uneven sizes. I was impatient.


Quick Dinner Rolls
(makes 16)


  • 2 1/2 cups warm water
  • 3 tbsp sugar
  • 2 2/3 tbsp yeast
  • 2 tbsp olive oil
  • 6 cups flour
  • 1 tsp salt
  • 1 tsp baking powder


  1. Mix sugar, yeast, water, and oil. Let it sit for 10 minutes, until frothy.
  2. Add everything else.
  3. Knead.
  4. Shape into whatever shape you like! Rolls, buns, pizza dough, loaves.
  5. Optional: brush with milk before putting in the oven.

Note: If you let the rolls sit on the counter for 30 mins to 1 hour, they will rise and grow quite nicely. Bigger rolls for everyone! But this is unnecessary. I just put the dough straight in the oven.
