Vegetable Salad Rolls

This was a fusion take on Vietnamese salad rolls, which I also love. I used whatever I had on hand in the fridge and it turned out delicious served with a side of peanut sauce. Most of my rolls ended up being blobby messes, but I got the hang of it after the first half-dozen. They were consumed, so there is no evidence! hah!


Fillings: bell pepper, shrimp, daikon (radish), fennel, carrot, spinach.
