Pan Fried Lotus Root

Some days, I crave certain kinds of food. Lately it's been vegetables, and I've been reducing my meat intake. It feels so good.

I've eaten lotus root before, but I've never attempted to cook it. Here's a good write up on how to prepare the lotus root. I skipped the first parts because I bought it pre-sliced and in water.

Pan Fried Lotus Root
I just threw things in the pan together with the lotus root once it started to get translucent: sesame seeds, bean sprouts, chives, soy sauce, a dash of maple syrup, a bit of balsamic vinegar, sesame oil. I let it get nice and caramelized. It was delicious with some rice. It also makes a nice side dish, cold, like pickles.
