Recipe: Avocado and Red Cabbage Salad

This salad's so colorful it makes me happy. If I had some tomatoes and carrots I would have added them some for a pop of red and orange. Then it would have turned into a rainbow!

Avocado and Red Cabbage Salad

Ingredients:
  • 1 avocado, sliced
  • 2 cups of red cabbage, sliced
  • 2 tbsp diced chives
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil

Method:
Toss the cabbage, chives, salt, pepper, vinegar, and olive oil together, and drop the avocado pieces on top. Enjoy!
