Recipe - Tzatziki

This recipe comes direct from my husband's family in Greece. This is the best tzatziki I've tried and the secret is simple: fresh ingredients. This one's always a hit at parties! Serve it with some pita bread as a dip, use this as salad dressing, as marinade for salmon, or as a gourmet hamburger topping. Very versatile :)

Recipe: Tzatziki
(makes 1 pint or 1/2 litre)

Ingredients:
  • 1/2 english cucumber
  • 5 heaping tbsp of balkan style / Greek style yogurt (Don't use nonfat. Here's a recipe for yogurt.)
  • 2 tbsp chopped fresh dill
  • 2 garlic cloves - diced as small as possible
  • pinch of salt
  • Extra virgin olive oil to garnish
Directions:
  1. Grate the cucumber using a cheese grater, or chop into small chunks.
  2. Drain as much excess liquid from the cucumber as possible by patting it with a paper towel, or squeezing it gently.
  3. In a bowl, mix the cucumber, dill, salt, yogurt, and garlic together until well combined.
  4. Drizzle olive oil over the tzatziki when you're ready to serve.
Sometimes simple things are the best.
