Recipe: Beet and Feta Salad
Beets are a little bit messy to cook but the sweet and slightly crunchy texture make them a favorite of mine. This is a light and refreshing salad perfect for sunny days.
- 3 beets (alternate - one can or bottle of pickled beets)
- 1/2 cup crumbled feta cheese
- 3 green onions - sliced
- Pepper to taste
- A pinch of salt
- 1 tbsp olive oil
- A splash of balsalmic vinegar
Boil the beets, peel and cube. Put in the fridge to cool. When the beets are cool mix them with the remaining ingredients. Super easy!
Extra garnishes that also work well with this salad: fresh basil leaves, or a little bit of fresh mint.
